Frozen vs. Market fresh: Who wins the vitamin challenge?

 

 

Frozen vegetables usually contain more vitamins than freshly bought vegetables: thanks to the fast processing and the shock freezing. Read more below.

There is a lot of emphases placed on the superiority of fresh produce, but recent studies show that in many cases frozen is the better nutritional choice. Vegetables contain numerous vitamins, minerals, trace elements and phytochemicals that can protect against various diseases. In contrast to the so-called fresh vegetables, frozen vegetables usually have a higher nutrient content, even after months.

Freshly frozen vegetables are offered in the best possible quality, and they are already prepared for cooking and in the desired portion size.

Almost all vegetables are very good for freezing. Exceptions are very hydrous products such as radishes, tomatoes, cucumbers, and lettuce.

Researchers say that approximately 2/3 of the frozen varieties tend to be richer in both vitamins and antioxidants.

In addition, fruits and vegetables from distant countries are often only harvested half-ripe to make long-term transport possible. In these immature fruits, the proportion of important ingredients, such as vitamins, minerals, trace elements and enzymes is still relatively low. On the other hand, fruits and vegetables intended for deep-freezing are harvested at the optimum time for maturation and then removed from the natural aging process by shock-freezing. There are no chemicals involved, and, if you worry about frozen fruit and vegetables losing nutrients, then remember that fresh ones lose them too.  Green peas lose just over half their vitamin C in the first 24 to 48 hours after picking.

Today an increasing demand for frozen foods already exist and further expansion of the industry is primarily dependent on the ability of food processors to develop higher quality in both process techniques and products.
